FARINHA DE CONCHAS DE OSTRA: COMPOSIÇÃO, PROCESSAMENTO, APLICAÇÕES E LIMITAÇÕES — UMA REVISÃO NARRATIVA

O descarte de conchas de ostra constitui um desafio ambiental e logístico nas regiões produtoras, mas sua composição predominantemente mineral favorece o aproveitamento como farinha rica em carbonato de cálcio. Esta revisão narrativa sintetizou evidências sobre composição, processamento, aplicações e limitações da farinha e de outros derivados de conchas de ostra. Foram consultados artigos, revisões, trabalhos acadêmicos, documentos técnicos e normas disponíveis até agosto de 2026, com ênfase em valorização das conchas, caracterização mineral, aplicações alimentares, agrícolas, ambientais e industriais e aspectos de segurança. Os estudos mostram que espécie, origem e processamento modificam a composição, a granulometria, a estrutura mineral, a solubilidade e o desempenho tecnológico. As evidências mais consistentes concentram-se em aplicações agrícolas, ambientais e industriais; no uso alimentar, os resultados dependem da forma do derivado, da dose, da biodisponibilidade, da qualidade sensorial e do controle de contaminantes. Conclui-se que os derivados de conchas apresentam potencial de valorização ambiental e tecnológica, mas sua utilização deve ser definida segundo a rota de processamento, a finalidade e os requisitos de segurança de cada aplicação.
